The Ultimate Addicting Potatoes!

Do you love potatoes? I could eat potatoes at every meal and never get tired of them. The issue is finding new and exciting ways of preparing them so they aren’t always the same old, same old, dud, spuds. This potato recipe is so delicious that making just one pan is never enough. I’m sure that after you try this new recipe for making potatoes, you’ll totally agree with me.

One of my daughters has told me that they are addictive. I can’t disagree with her because they actually are and she’s right. The best part about this recipe is how“easy” they are to make. With just a few ingredients, I’m sure you’re going to love the ease of cooking them and your dinner guests will offer up praises of appreciation for your culinary accomplishment. So without further ado, let’s get those spuds cooking!

INGREDIENTS

1 large bag of shredded potatoes. (shredded hash brown type) I highly recommend doubling this recipe because they will go fast.

2 packages dry Ranch dressing mix

2 cups shredded cheddar cheese (or a mixture of your favorite cheeses)

1 large container sour crteam

1 block softened cream cheese (2 if your doubling)

1 1/2 cups crumbled bacon

DIRECTIONS

Set oven to 375 degrees

In a mixing bowl combine all ingredients and mix until well blended

Place mixture in a baking dish and cover with aluminum foil.

bake in oven for 25 minutes. remove foil and bake an additional 10-15 minutes. (you can top with additional cheese and or bacon if you want to)

Remove from oven and serve. Wait until you see how fast they disappear!

Do you like Ranch Chicken? How about ranch Chicken Salad? Hint; The dressing is not Ranch . . . Surprise! But the chicken is!

INGREDIENTS FOR RANCH CHICKEN

Boneless chicken breats

1 egg

Panko bread crumbs-about 1 cup

Ritz crackers (about 10) crushed

Ranch dressing

Preparation

Set oven to 350 degrees, In a bowl combine egg and 1/2 cup Ranch dressing-mix well.

In a separate bowl combine panko crumbs and crushed Ritz crackers.

lightly coat a cookie sheet with olive oil. Dredge chicken in ranch dressing mix and then completely coat with bread crumb mixture. Place on cookie sheet, place in oven for approx 30 minutes. Remove from oven and let completely cool down

INGREDIENTS FOR RANCH CHICKEN SALAD

Ranch Chicken cut into bite size pieces

10 green grapes cut in quarters, 2 stalks of celery finely chopped, 1/4 cup red onion chopped,1tsp coarse salt, 1/2 tsp ground pepper, 1cup mayonnaise (more or less, it’s up to you)

DIRECTIONS

Mix it all together, cover and put in fridge for about an hour allowing all the flavors to meld together. Serve it on your favorite bread, wrap, greens or just eat it by the spoonfuls!  I had mine on a toasted sesame bagel . . . YUM!
