Berry, Berry, Puff, Puff and Some Blondie- Benatar

It’s dessert time Y’all, I would be lying through my teeth if I told you that I didn’t like dessert as much as the next carb junkie, but I’m taking a tiny break from ice cream and heading in a healthier direction . . . sort of, kind of, well, not really! These are my own creations I put together when I was bored and hungry. Yes, boredom and hunger go together like PB&J and popcorn, butter and salt. I suppose they are a wee bit on the healthy side, I mean, they do contain fruit! And I thought for your listening enjoyment today, I would make it a “ladies Day” It’s throwback Sunday so make some berry, berry, puffs and get down to some Blondie and Benatar!

Ingredients

Blueberries, strawberries, sugar, vanilla extract, 2 pastry puff sheets, melted butter

Directions

If using frozen puff pastry dough, thaw at room temperature for about 20 minutes. wash blueberries off and place in a container. (make sure to remove the stems) Wash strawberries off, slice into pieces and place in another container. (make sure to remove greenery from top)

Next . . . add about 1/4 cup sugar to both the blueberries and strawberries and then 1 tsp of vanilla extract to both. mix well. (I poke holes and squish the blueberries just a little bit to release some juice.) Place in refrigerator for about 30 minutes.

While the fruit is in the fridge, roll your puff pastry dough out and cut it into squares. I do 9 on each sheet. Place them on non-greased cookie sheet.

Set oven to 350 degrees.

Remove fruit from fridge and drain each one through a colander. You don’t want the fruit to wet. Next, place a spoonful of blueberries and strawberries in the center of each pastry square.  Take your second puff pastry sheet and cut that one into 9 squares.(smaller or larger if you want). Use your cooking brush and brush some melted butter around the outside edges of pastry square. Place another pastry square on top and press down around edges using a fork to make a nice, closed, shell. Cut 3 small slices on top to vent. Brush tops with a little melted butter.  Place in oven for approx. 20 minutes. check them periodically to make sure they don’t burn.

Remove from oven and let cool. If you want to, you can sprinkle the tops of them with coarse sugar while they are warm. So, you can either eat them like this . . . or eat them my way . . .  with vanilla ice cream, some extra fruit and some whipped cream. See, up until this point they weren’t that unhealthy, but they screamed out to me . . .ice cream (echo . . echo . . echo . . ) So I obliged! I hope you enjoy them Bon Apatite!
